Grilled Cherry, Goat Cheese and Arugula Naan Pizza

Pizza is a crowd favorite, but we all know it’s not very good for you. One personal pepperoni pizza has around 500 calories and 55 grams of carbohydrates, not to mention is high in sodium and saturated fat — yikes! This recipe aims to make traditional pizza healthier, while also making it a little more gourmet. The combination of sweet and creamy sensations makes this dish perfect for summertime and is sure to impress your family and guests.

The ingredients used in this recipe pack in nutrients that are beneficial to your health. Cherries have numerous health benefits, some of which include a reduced risk of cancer and stroke, reduced belly fat, sleep support and relief from arthritis pain. Garlic has been shown to reduce blood pressure and lower “bad” cholesterol, or LDL, both of which can help reduce the risk of heart disease. If you want to go one step further, try purchasing whole grain naan bread that is rich in fiber and protein and low in sugar. This will help keep you feeling full for longer and provide you with “good” carbohydrates.

  • Naan bread
  • 1 Tbsp. EVOO
  • 1 clove garlic, minced
  • 1 cup tart cherries, pitted and halved
  • 2 ounces goat cheese, crumbled
  • 1 cup arugula
  • ½ cup balsamic vinegar
  • 1 Tbsp. honey
  • Salt and pepper to taste

Grilled Cherry, Goat Cheese and Arugula Naan Pizza

1. Preheat grill to medium-high heat.

For the balsamic glaze
2. Heat a small saucepan over medium-high heat.
3. Add in balsamic vinegar, honey and a pinch of salt. Bring the mixture to a boil then reduce heat to medium-low and simmer for 6-8 minutes or until mixture is syrupy.

For the garlic oil
4. Heat oil in a small saucepan then add in the minced garlic. Remove the oil from heat and let mixture sit to infuse the oil with the garlic.

For the pizza
6. Brush the top of the naan bread with half of the garlic infused oil. Place the naan bread oil side down onto the grill. Brush the top of the naan bread with remaining oil.
7. Grill the naan bread for 2-3 minutes and then flip it over to grill the other side.
8. Lower grill heat to medium-low and immediately scatter the grumbled goat cheese and halved cherries on top of the naan bread. Grill for another 3 minutes. Be careful not to burn the naan bread.
9. Top with arugula, balsamic drizzle and salt and pepper to taste.
10. Serve and enjoy!
