Get Your Grill On with this Manly Chicken Recipe

Need a fast and healthy weeknight dinner? Look no further than the winning recipe from this year’s “Real Men Cook & Eat Healthy” Cooking Contest. Grand Rapids resident Kevin Adams took home the first-place prize of $350 for his Citrus Grilled Chicken and Arugula Salad.

The cooking competition was part of “Let’s Talk Health” week, which is put on annually by Blue Cross Blue Shield of Michigan and partnering community organizations to emphasize the importance of a healthy lifestyle.

Ingredients

Citrus Grilled Chicken

4 chicken breasts
3 TB cumin
2 TB minced garlic
3 TB onion powder
¼ cup lime juice
¼ cup lemon juice
1 TB rosemary
3 TB chopped basil
3 TB chopped thyme

 

Arugula Salad

6 cups of baby Arugula
1 cup of chopped mint leaves
2 cups watermelon cubes
¼ cup diced yellow pepper (optional)
¼ cup diced orange pepper (optional)
¼ cup Feta cheese

 

Vinaigrette Dressing

1/3 cup fresh squeezed orange juice
1/3 cup fresh squeezed lemon juice
¼ cup fresh squeezed lime juice
¼ cup minced onions
1 TB honey
½ cup olive oil
Salt and pepper to taste

Citrus Grilled Chicken and Arugula Salad

Instructions
Citrus Grilled Chicken
1. Combine all ingredients and marinate chicken two to four hours.
2. Baste chicken on grill with fresh basil and thyme (½ cup each mixed in ½ cup lemon juice and ¼ cup olive oil.)

Arugula Salad
1. Toss all ingredients together and serve with vinaigrette

Vinaigrette Dressing
1. Mix all ingredients together and drizzle over salad or serve on the side.
