2 low-fat eggnog recipes that are simple and delicious

eggnogWith the holiday season upon us, you expect to see cartons of eggnog filling up the dairy aisle at your local grocery store. It’s difficult to pass up this delicious holiday treat when I see it while shopping. That cup of creamy eggnog seems to evoke that familiar feeling of Christmas like no other beverage.

But as we know, eggnog is filled not only with amazing flavor, but calories — hundreds of them! So even though I may pass on purchasing a carton when I’m shopping, it does not mean that I can’t enjoy a creamy cup of this holiday treat at home. All I have to do is mix up some of my own eggnog in my kitchen. This allows me to reduce the calorie content immensely and leaves me feeling guilt free.

I’ll share two of my favorite eggnog recipes to help you indulge your holiday spirit and please your calorie-conscious but decadence-seeking party guests. 

Low-fat, egg-free eggnog 

Ingredients:
11 cups cold fat-free milk
2 teaspoons vanilla extract
2 1.5-ounce packages instant vanilla sugar-free pudding mix
Artificial sweetener to taste (equivalent to 1/3 cup sugar)
½ teaspoon ground nutmeg

Directions:
Combine the milk and vanilla in a large bowl. In a different bowl, combine dry pudding mix, artificial sweetener and nutmeg. Whisk into milk mixture until smooth. Refrigerate for at least one hour.

Nutritional Information (Makes 12 servings)
Per serving: 105 calories; trace total fat; 408mg sodium; 17gm carbohydrates; 8mg protein

Low-fat eggnog 

Ingredients:
4 cups cold fat-free milk
1 12-ounce can evaporated skim milk
1 8-ounce carton frozen egg product, thawed
½ cup sugar
1 teaspoon vanilla extract
1/3 cup light rum (optional)

Directions:
Cook and stir the fat-free milk, evaporated skim milk, egg product and sugar over medium heat for approximately 10 minutes or until mixture is slightly thickened — do NOT boil. Remove from heat. Stir over a bowl of ice water. Cover and chill 4-24 hours. Stir in the vanilla extract and optional light rum. Stir in additional skim milk until desired thickness. Sprinkle each serving with ground nutmeg.

Per serving: 107.2 calories; 0.1g total fat; 106.8mg sodium; 17.2g carbohydrates; 0g fiber; 7.2g protein
