Your Recipes: 19 Great Ideas For the Fall Bounty

Fall is officially here and to me, that means football, food and fun. There are some great seasonal foods coming into harvest, like apples, pumpkin and acorn and butternut squash. And as the weather gets colder, I seem to want foods that are served hot, rather than salads and cold sandwiches.
I reached out to my friends on Twitter and Facebook to ask about their favorite fall recipes. They had a lot of great things to offer. I tried to categorize these wonderful recipes below.

Chili, Soups and Stews

I had many people tell me that they love chili. I know it is definitely one of my favorites too — with cornbread, of course. Here are some of the recipes that were shared with me:

What is your favorite chili recipe? Adriwall even recommended using a meat substitute like a textured vegetarian protein in chili instead of meat.
As it gets colder out, you can’t go wrong with soup. Here are some amazing recipes from you that I can’t wait to try:

Seasonal Autumn Produce

  • brianjbellz recommended spaghetti squash as a good seasonal vegetable that doubles as a healthy substitution for pasta. “Cut in 1/2, lose pulp, bake skin up, 375F, for 40 min, scrape & serve!” he wrote.
  • sveng Recommends roasting acorn squash with olive oil, brown sugar and fresh ginger.
  • Try this pumpkin smoothie from fitobj. I love this. What a great way to get pumpkin flavor in a healthy beverage.

I also got the suggestion to make spicy food to warm you when it is cooler out — everything from spicy chili and spaghetti sauce to twisting a favorite comfort, such as Cajun-style meatloaf.
My friend katyistall gave me this recipe for black bean-sweet potato burritos. I made these the other night and they are amazing!
Sweet Potato Black Bean Burritos:
  1. Bake sweet potatoes (about 1 sweet potato per person).
  1. Rinse and drain black beans.
  1. After sweet potatoes are baked, peel them (they will be very, very hot and you will burn your fingers. Running them under cold water while you peel the skin off helps.)
  1. Mush up those steamy potatoes in a bowl.
  1. Add in the black beans (but don’t mush those unless you’re into really mushy things).
  1. Add some salsa.
  1. Add a bit of ground cumin and ground coriander.
  1. Shlop that mix into 10-inch tortillas.
  1. Fold up the tortillas around the deliciousness.
  1. Place in lightly greased baking pan and heat in the oven at 375 degrees for about 10-12 minutes.
  1. In the last 2 minutes of cooking, sprinkle those delicious babies with some shredded cheddar.
  1. Serve with some sour cream and salsa and other delicious accessories.
  1. Enjoy
These burritos are great for enjoying the next day as leftovers.
