Sausage, Pear and Apple Stuffing Muffins

This tasty muffin recipe will help you use up your leftover stuffing. The addition of apples and pears provide a sweet and nutritional boost to these unique and filling stuffing muffins.

  • 3 sweet Italian turkey sausage links, casings removed
  • 1/2 onion, diced
  • 1 celery stalk, finely diced
  • 1 pear, peeled, cored and diced – try Bosc or Anjou
  • 1 apple of choice, peeled, cored and diced
  • 2 cloves garlic, minced
  • 1 tsp. sage
  • 1 tsp. thyme
  • 1 tsp. salt-free seasoning, such as Mrs. Dash
  • 5 cups leftover stuffing
  • 2 eggs
  • 1 1/3 cup reduced sodium chicken or turkey broth
  • pepper to taste

Sausage, Pear and Apple Stuffing Muffins

1. Preheat oven to 375°F. Spray 12 regular-size muffin cups lightly with no stick cooking spray or line with paper baking cups. Set aside.
2. Cook and crumble sausage in medium skillet on medium heat until no longer pink. Transfer sausage to large bowl. Add onion to same skillet; cook and stir on medium heat 2 to 3 minutes. Add celery, pear and apple; cook and stir until just softened, about 5 minutes. Add sage, thyme, garlic, salt-free seasoning and pepper; cook and stir 30 to 60 seconds or until fragrant. Transfer onion mixture to bowl with sausage. Add stuffing; do not mix.
3. Mix eggs and broth in medium bowl with wire whisk until well blended. Pour over stuffing mixture. Using a large spoon, mix well, moistening all of the stuffing.
4. Spoon stuffing mixture into the 12 greased muffin cups. Gently press the stuffing into the cups and form slightly mounded tops.
5. Bake 20 to 22 minutes or until golden. Cool 5 to 10 minutes in pan on wire rack. Run a knife or spatula around each cup to loosen stuffing muffins. Use a spoon to gently release muffins from the cups. Serve warm. Enjoy!
