Slow Cooker Pulled Pork with Apple and Onions

Apples are packed with vitamin C and fiber – and are also linked to improved heart health. Also, onions  have antioxidant and anti-inflammatory effects that help fight infections and lower blood sugar.

  • 1 (3 pound) boneless pork shoulder
  • 2 Tbsp. smoked paprika
  • 2 Tbsp. brown sugar
  • 2 Tbsp. garlic powder
  • 2 Tbsp. cumin
  • 1 Tbsp. kosher salt
  • 1 tsp. pepper
  • 2 medium apples – sliced
  • 1 large onion – sliced
  • 12 oz. hard apple cider or apple cider or beer

Slow Cooker Pulled Pork with Apple and Onions

1. In a small bowl, mix together spices: smoked paprika through pepper. Coat the pork shoulder with the dry rub and refrigerate. Spray slow cooker or use slow cooker liner.
2. Meanwhile, prepare apple and onion slices and place in the bottom of a slow cooker and top with the pork shoulder. Add apple cider and cook on Low for 8 hours or High for 4 hours.
3. When cooking time is complete, remove pork from the slow cooker and let rest. When pork is cool enough to handle, begin shredding the meat, disposing of excess fat.
4. Place shredded, lean pork meat back into the slow cooker and mix with the apples, onions and cooking juices. Serve on a bun or alone. Enjoy!
