Slow Cooker Peach and Bourbon Bonanza Baked Beans

• 3 center-cut bacon slices, chopped
• Cooking spray
• 1 (15-oz.) can unsalted cannellini beans, drained and rinsed
• 1 (15-oz.) can unsalted pinto beans, drained and rinsed
• 1 (15-oz.) can unsalted black beans, drained and rinsed
• 1 (15-oz.) can unsalted kidney beans, drained and rinsed (dark or light red)
• 2 ripe peaches, peeled and finely diced (about 2 cups)
• 2 garlic cloves, minced
• 1/2 cup ketchup
• 1/2 cup bourbon
• 1/4 cup maple syrup
• 2 Tbsp. apple cider vinegar
• 1 Tbsp. Dijon mustard
• 2 tsp. chili powder
• 1 tsp. smoked paprika
• Salt and pepper to taste
• 1 Jalapeno pepper, diced (optional – de-seed for less spice or you can leave the seeds in for more heat)

Slow Cooker Peach and Bourbon Bonanza Baked Beans

1. Heat a large nonstick skillet over medium-high. Add bacon, and cook, stirring occasionally, until crisp, 4 to 5 minutes. When finished, remove bacon from skillet.
2. Coat inside of a 4-quart slow cooker with cooking spray or use a slow cooker bag. Crumble bacon into the slow cooker. Add beans and remaining ingredients. Stir well.
3. Cover, and cook on low 4 to 6 hours. Serve warm. Enjoy!
