Berry Oatmeal Muffin Cups
These muffins are the perfect on-the-go breakfast for a busy morning. Make them the night before and store in the fridge to eat throughout the week.
Oats make for a great breakfast because they contain both soluble and insoluble fiber. Soluble fiber helps to lower cholesterol and stabilize blood glucose levels, while insoluble fiber promotes a healthy digestive system. Oats will also keep you feeling fuller longer, which is great for long mornings filled with back-to-back meetings.

Ingredients
- 2 1/2 cups old-fashioned rolled oats
- 1 1/2 cups low-fat milk
- 1 large egg, lightly beaten
- 1/3 cup pure maple syrup
- 2 Tbsp. heart healthy oil
- 1 tsp. vanilla extract
- 1 tsp. ground cinnamon
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 cup berries of choice, fresh or frozen
Berry Oatmeal Muffin Cups
Instructions
1. Preheat oven to 350°F.
2. In a bowl, whisk all wet ingredients until fully combined.
3. Add the dry ingredients and mix thoroughly.
4. Mix in the berries.
5. Divide mixture amongst the lined cups of a muffin tin.
6. Bake 25 minutes. Serve warm. Enjoy!
Note: You can freeze for up to 3 months or store in the refrigerator for up to 4 days in an airtight container. Warm before serving.
