Unstuffed Pepper Casserole

This easy recipe is healthy, full of vegetables and whole grains. It’s an easy to make and delicious dish for the whole family.

The peppers are low in calories and loaded with good nutrition. All varieties are excellent sources of vitaminsĀ A and C, potassium, folic acid, and fiber.

  • 1 lb. extra lean ground beef or ground turkey
  • 2 bell peppers, choice favorite colors, chopped into 1/2-1 inch pieces
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/4 tsp. red pepper flakes (optional)
  • 1 cup cooked quinoa
  • 1 cup cooked brown rice
  • 1 jar (24 oz.) favorite pasta sauce or use your own homemade sauce
  • 1 1/2 cups low-fat shredded sharp cheddar cheese
  • Salt and pepper to taste

Unstuffed Pepper Casserole

1. Heat oven to 350 degrees F. Use cooking spray to prepare 2 quart casserole dish.
2. Cook ground meat thoroughly in large skillet, drain as needed.
3. Add peppers, onion, garlic and red pepper flakes to skillet, warm through.
4. Stir in quinoa, rice, pasta sauce and half of the cheese.
5. Spoon mixture into prepared casserole dish and top with remaining cheese.
6. Bake for about 20 minutes or until heated through. Enjoy!

  1. Great looking dish Grace. I’m wondering why you use ground beef or ground turkey when beef has been designated as a category 1 carcinogen? Would you consider a meat alternative? Perhaps also replace the dairy cheese (also cancer causing) with a dairy alternative? Appreciate the perspective of a dietician. Thank you.
