Producing Whole Grain Flour at Holland’s De Zwaan Windmill
The De Zwaan Windmill in Holland, Mich. is not only a historic attraction, it’s also a functioning machine that produces healthy whole wheat flour for the local community and beyond.
Miller Alisa Crawford oversees the production of stone-ground flour at the mill, which is ground from wheat proudly grown by West Michigan farmers.

De Zwaan Wheat Bran Muffins
- 1 cup bran
- 1 ½ cups whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- ¾ cup milk
- ½ cup honey
- 2 TBSP oil
- One egg
- 1/2 cup raisins (optional)
Directions: Combine dry ingredients of bran, flour, baking powder and baking soda. Add in milk, honey, oil, egg and raisins, if desired. Mix well.
Spoon into muffin papers in a cupcake tin. Bake at 400 degrees for 15-17 minutes. Serves 12.
