Watermelon: New Ways to Enjoy Summer’s Juiciest Fruit

Summer may be beginning to wind down, but it’s not over yet! Exhibit A: Watermelon is still in season. Not only is it filling and the perfect solution for a sweet tooth, it’s also very healthy to snack on, thanks to its high levels of vitamins A, C and B6. Here are a few fun ways to mix up how you’re serving watermelon. (Though there’s no harm in simply cutting and eating a slice either!)

8 watermelon triangles with rind still on (cut two round watermelon slices into fourths)
2 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
2 tbsp. honey
1 pint grape tomatoes, cut in half or quartered, depending on size
4 oz. fresh mozzarella, sliced
Handful of basil leaves
Balsamic vinegar to taste

Honey-Grilled Watermelon Caprese Salad

Preheat grill to medium. Brush olive oil onto both sides of each watermelon piece and drizzle honey over triangles. Grill each side of watermelon for about two minutes. Place two triangles on each plate, then top with tomatoes, mozzarella and basil. Drizzle balsamic vinegar on top and season with salt and pepper.

4 cups cubed watermelon
1 avocado, cut in to small cubes
1/2 red onion, sliced thin
1/2 cup chopped fresh mint
2 tbsp. olive oil
Juice from one lime
1 tsp. sea salt
1/4 tsp. freshly ground black pepper
1/2 cup crumbled feta cheese

Watermelon, Avocado, Mint and Feta Salad

Put watermelon, avocado, red onion and mint in a bowl. In a separate bowl, whisk olive oil, lime juice, salt and pepper. Add dressing to watermelon mixture. Cover and refrigerate for 30 minutes. Crumble feta cheese over salad right before serving.

1/2 seedless watermelon, cut into small cubes
1/2 red onion, diced
1 red pepper, seeded and diced
1 green pepper, seeded and diced
1 yellow pepper, seeded and diced
2 jalapenos, seeded and diced
1 handful cilantro, diced
1/2 tsp. salt
Juice from two limes

Watermelon Pico de Gallo

Combine all ingredients (except lime) in a large bowl and stir. Add in the lime juice while continuing to mix. Enjoy as a salsa with chips or as a side salad/topping for grilled fish or chicken.
