Black Bean Guacamole Dip

Black bean guacamole dipIngredients

  • 2 jalapenos (seeded for less heat, if desired), finely chopped
  • 1 clove garlic, finely chopped
  • ½ medium white onion, finely chopped
  • Kosher salt
  • Pepper
  • 1 can (15 ½-ounce) black beans, rinsed
  • 2 scallions, thinly sliced
  • 2 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1 avocado, diced
  • ½ cup fresh cilantro, chopped

Directions

  1. In a large bowl, combine the jalapenos, garlic, onion, salt and pepper.
  2. Add the beans, scallions, lime juice and oil. Toss to combine. Fold in the avocado and cilantro.
  3. Serve with baked lentil chips and enjoy!

Lemon Blueberry Muffins

Lemon Blueberry MuffinsIngredients

  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • ¼ cup butter
  • 1 ¼ cups low-fat buttermilk
  • 1 large egg
  • 1 tablespoon grated lemon rind
  • 1 cup blueberries
  • Cooking spray
  • 1 tablespoon fresh lemon juice
  • ½ cup powdered sugar

Directions

  1. Preheat oven to 400 degrees.
  2. Combine flour, sugar, baking powder, baking soda, salt and ground nutmeg in a medium bowl. Cut in butter until mixture resembles coarse meal.
  3. Combine buttermilk, egg and lemon rind in a separate bowl. Add to flour mixture and stir until moist. Add blueberries.
  4. Spray muffin tin paper with cooking spray before scooping the batter in. Bake for 20 minutes, or until the muffins spring back when lightly touched.
  5. Remove muffins from pans immediately and place on wire rack to cool.
  6. For the glaze, combine lemon juice and powdered sugar in a small bowl. Drizzle evenly over cooled muffins.

White Bean and Turkey ChiliIngredients

  • 1 tablespoon canola oil
  • 2 cups diced yellow onion (about 2 medium)
  • 1 ½ tablespoon chili powder
  • 1 tablespoon minced garlic
  • 1 ½ teaspoon ground cumin
  • 1tsp dried oregano
  • 1 (15.8-ounce) cans Great Northern beans, rinsed and drained
  • 4 cups fat-free, less-sodium chicken broth
  • 3 cups chopped cooked turkey
  • ½ cup diced seeded plum tomato
  • 1/3 cup chopped fresh cilantro
  • 2 tablespoon fresh lime juice
  • Salt and pepper
  • 8 lime wedges (optional)

Directions

  1. Heat oil in a Dutch oven over medium-high heat. Add onion and sauté 10 minutes or until tender and golden. Add chili powder, garlic and cumin and sauté for 2 minutes. Add oregano and beans; cook for 30 seconds. Add broth and bring it to a simmer. Cook for 20 minutes.
  2. Place 2 cups of bean mixture in a blender or food processor until smooth. Return pureed mixture to pan. Add turkey, and cook 5 minutes. Remove from heat. Add diced tomato, chopped cilantro, lime juice, salt and pepper, stirring well.
