Grilled Peach Salad

This summertime salad features grilled sweet peaches contrasted with peppery arugula, creamy avocado and goat cheese, crunchy pistachios and tangy balsamic vinaigrette. Serve alone or with a grilled protein like marinated chicken.

Ingredients
3 peaches, cored and sliced
Spray oil
2 cup romaine lettuce
1 cup arugula
1⁄2 cup cherry tomatoes, halved
1 avocado, sliced
1⁄4 cup honey-roasted pistachios
1⁄4 cup goat cheese, crumbled
Balsamic vinaigrette to taste
Instructions
Step 1
Preheat the grill to medium-high heat.
Step 2
Spray the peach slices with oil and grill for 2-3 minutes per side until grill marks appear.
Step 3
Remove the peaches from the grill and let them cool slightly.
Step 4
In a large bowl, add lettuce, arugula, avocados, cherry tomatoes, pistachios, goat cheese and grilled peaches. Drizzle with balsamic vinaigrette.
