Roasted Beet with Orange and Walnut Crostini

Ingredients
2 medium beets, roasted and sliced
1 orange
1 baguette, sliced into rounds
Olive oil
1⁄2 tsp. powdered garlic
4 oz goat cheese
1⁄4 cup Greek yogurt
1 clove garlic, minced
Salt & pepper to taste
1⁄4 cup toasted walnuts, chopped
Instructions

Step 1
Preheat oven to 400 degrees F for baguette and if using raw beets. If using raw beets, wrap in foil with olive oil, salt and pepper, then roast for 45–60 minutes until tender. Let cool, then peel and cube.

Step 2
Zest the orange, then peel, segment and cut into ¼-inch cubes.

Step 3
Brush baguette slices with olive oil, then top with powdered garlic, salt and pepper. Toast until golden, about 12-15 minutes.

Step 4
In a food processor, blend orange zest, 1 Tbsp. olive oil, goat cheese, Greek yogurt and minced garlic until smooth.

Step 5
Spread a layer of cheese mixture on each crostini, top with cubed beets, a few pieces of orange, a sprinkle of toasted walnuts and a drizzle of balsamic glaze.
