Better yet, it’s the perfect plant-based protein for these summer handheld pinwheels. Combining it with romaine lettuce and sundried tomatoes makes for a crispy and refreshing Mediterranean-inspired lunch or snack.

- 3 10-inch whole wheat wraps
- 1 head romaine lettuce, washed, dried and trimmed
- 1 cup garlic hummus
- ½ cup sundried tomatoes
- 2 sprigs green onion, finely chopped
- 15 toothpicks
Instructions
- Place wrap on a plate or cutting board, then line with a layer of whole romaine lettuce leaves. As long as the romaine is dry, this layer will ensure the wrap doesn’t get soggy from the hummus.
- Spread ¼ cup hummus in the middle of the wrap on top of the romaine, followed by a line of sundried tomatoes and green onions.
- Roll the wrap up, then cut into 5 pieces or to desired thickness.
- Secure pinwheels with toothpicks if desired but remind your guests they’re in the pinwheels.
