Omelet in a Mug
This recipe is perfect for starting your day off with a solid source of protein and nutrients. You can modify it to include any vegetables or frozen vegetables you would like.

Ingredients
- 2 eggs, lightly beaten
- 2 Tbsp. turkey or lunch meat of choice
- 2 Tbsp. fresh baby spinach, chopped
- 1 Tbsp. green pepper, diced
- 1 Tbsp. red pepper, diced
- 1 Tbsp. tomato, diced
- 1 Tbsp. reduced-fat cheddar cheese
- Salt and pepper to taste, if desired
Omelet in a Mug
Instructions
1. Spray a microwave-safe mug with non-stick cooking spray.
2. Combine all ingredients in mug and mix.
3. Microwave uncovered on high for 1 minute; stir. Cook for 1-1 1/2 minutes longer or until eggs are completely set. Serve warm. Enjoy!
