Slow Cooker Steak Salad with Cilantro-Lime Dressing

Michigan winters make grilling outside less than desirable. Fortunately, you can satisfy your steak cravings with this recipe that is as delicious as it is healthy.

Steak is a good source of iron and protein. Having it marinade in a slow cooker helps bring out the flavors of the seasoning. Cilantro helps vision, supplies vitamin A and improves heart health. Lime lowers cholesterol, aids in weight loss, improves skin health and helps reduce hypertension.

For steak

  • 2 pound skirt steak
  • 2 Tbsp. olive oil
  • 1 Tbsp. steak seasoning

For salad

  • 2 heads romaine hearts, chopped
  • 2 ears corn kernels, removed
  • 1 can of black beans, drained and rinsed
  • 1 cup grape tomatoes, sliced
  • 1 large avocado, diced
  • 4-5 baby sweet peppers, sliced

For dressing

  • 1/2 cup Greek yogurt
  • 2 Tbsp. lime juice
  • 1/4 cup cilantro
  • salt to taste

Slow Cooker Steak Salad with Cilantro-Lime Dressing

1. Rub steak with olive oil and steak seasoning.
2. Place in slow cooker and cover.
3. Cook on low for about 8 hours (or until tender).
4. Remove and let cool slightly. Slice or pull apart with forks.
5. Toss veggies in large bowl and top with steak.
6. In food processor or blender, add yogurt, cilantro and lime juice. Blend until smooth.
7. Add salt to taste.
8. Drizzle salad with dressing and toss. Enjoy!
