Mexican Chicken Fajita Roll-Up

The chicken in this recipe is a lean source of protein, which makes it a great addition to the meal.

Additionally, one cup of bell peppers is just about 45 calories and it will give you more than your daily quota of vitamin A and C.

Fajita ingredients in an open pita.


  • 2 lb boneless, skinless chicken breast, cut into 1/2 inch strips
  • 2-3 Tbsp. of favorite heart healthy oil
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 Spanish onion, sliced into strips
  • 1/2 cup of low sodium soy sauce
  • 1/2 cup of Worcestershire sauce
  • 2 Tbsp. liquid smoke
  • Tortillas
  • Optional; tomatoes, salsa, guacamole, plain Greek yogurt, beans, lettuce, cheese

Mexican Chicken Fajita Roll-Up

1. Warm oil and cook chicken thoroughly in large pan. Set chicken aside.
2. While chicken is cooking, mix soy sauce, Worcestershire sauce and liquid smoke in a bowl.
3. Drain pan of excess liquid and then sauté peppers and onions until onions are translucent and peppers to desired tenderness. Add chicken back to pan.
4. Add fajita sauce mixture, cook for about 5 minutes. Serve with tortilla and favorite toppings. Enjoy!
