Description
Enjoy these cabbage and glass noodles with fragrant garlic and ginger. The cabbage sears and get softened with a sauce made of sambal oelek, soy sauce, sesame oil and more. This dish works as a side or the star of the show as a light meal.

- 2 bundles dried glass noodles (rice or bean)
- ½ head cabbage, thinly sliced
- 3 Tbsp. olive oil
- 2 tsp. minced ginger or 1 tsp ground ginger
- 4 cloves garlic, finely minced
- 1 to 2 tsp. sambal oelek, depending on spice preference
- 3 Tbsp. light soy sauce
- Juice from ½ lime
- 1 Tbsp. sesame oil
- 2 tsp. brown sugar
- 1/4 cup water
- Salt and pepper to taste
- 2 green onions, chopped
- 1 tsp. white and/or black sesame seeds, optional
Instructions
- Soak the dried glass noodles in cold water while preparing other ingredients and cooking the cabbage.
- Heat olive oil in a pan over medium-low heat. Cook the ginger and garlic until the garlic is golden and fragrant. Add cabbage and stir fry for a couple of minutes until the cabbage is slightly wilted.
- In a small bowl, thoroughly mix sambal oelek, soy sauce, lime juice, sesame oil, brown sugar and water.
- Add the mixture to the pan and stir. Drain the glass noodles and add to the pan. Stir and allow to cook until noodles are to desired texture. Add salt and pepper to taste and top with chopped green onions with sesame seeds, if desired.
