Matcha Dalgona Recipe

I love matcha! You probably already know that if you have followed along with my recipes here. One of my absolute favorites is my matcha energy bite recipe. 

This matcha dalgona recipe is an easy and fun treat.  It is a different way to jump on that coffee dalgona bandwagon. Each recipe below makes one serving.

For those that are new to matcha, it comes from the same plant as green tea leaves, but it is grown differently. Farmers grow matcha by covering the tea plants for 20–30 days before harvesting to avoid direct sunlight. This increases chlorophyll production, boosts the amino acid content, and gives the plant a darker green hue. Matcha contains the nutrients from the entire tea leaf, which results in a greater amount of caffeine and antioxidants than typically found in green tea.

matcha dalgona


  • 1 egg white or the equivalent of one liquid egg white from a carton – this is pasteurized, while the egg white is not. You can also use 2 Tbsp. aquafaba (also known as chickpea liquid to make it vegan)
  • 1 Tbsp. raw organic sugar or granulated white or turbinado
  • 1- 2 tsp. matcha powder
  • 1 cup milk or milk substitute of choice. (I usually use almond or coconut milk, but any kind works)

Matcha Dalgona

1. Whip the egg white (or aquafaba) until it is frothy and mostly stiff with a hand mixer or whisk.
2. Add the sugar and whip until stiff peaks form and it sticks to your whisk/mixer.
3. Whisk in the matcha powder until it is fully incorporated. It is important to separate these steps so you get the whipped look and texture.
4. Add the milk to a cup. Top with the whipped matcha and enjoy!
