Sweet, chewy dates meet rich dark chocolate and bright pops of pomegranate in this simple, no-bake bark.
It’s naturally sweet, festive and perfect for whenever you want something that feels a little special without much effort. The dates provide a natural sweetness and a fiber-packed base and provide a canvas that’s easy to customize with different nut butters or toppings.

Ingredients
  • 12 Medjool dates, pitted

  • 12 cup dark chocolate chips (about 70% dark chocolate)

  • 14 cup pomegranate arils

  • 2 Tbsp. almond butter or pistachio butter

  • Pinch of flaky sea salt

Instructions
  • Step 1

    Prepare the date base. Place a parchment paper on a flat surface and arrange the pitted dates closely together. Top with another piece of parchment paper, then use a rolling pin or the bottom of a glass to press and roll them into an even rectangle, about ¼ inch thick.

  • Step 2

    Melt the dark chocolate in a microwave-safe bowl in 20-30 second intervals, stirring between each, or over a double boiler until smooth.

  • Step 3

    Pour the melted chocolate over the pressed date layer and spread evenly with a spatula or knife.

  • Step 4

    Warm the nut butter slightly (5-10 seconds in the microwave) so it’s drizzle-able, then drizzle over the chocolate layer.

  • Step 5

    Sprinkle pomegranate arils evenly over the top and finish with a pinch of flaky sea salt, if using.

  • Step 6

    Transfer the bark to the refrigerator for a couple of hours. Once firm, break or cut into irregular pieces.
