Healthy St. Patricks Day recipes
St. Patrick’s Day is ranked by Forbes as one of the most fattening American holidays. Indulging in beer and hearty foods can quickly rack up your daily calorie count, but it doesn’t have to be that way.
Here are some of my recipes that cut down calories while still letting you indulge in traditional Irish fare:
  • Irish Beef Stew: This delicious traditional stew has plenty of flavor plus tender beef, potatoes and even a little Guinness. It is delicious served with homemade Irish soda bread. My recipe uses whole wheat flour and currants, adding fiber. The currants also offer antioxidants and provide a great tart flavor to contrast hearty soups perfectly. Get the recipes here.
  • Unstuffed Cabbage Soup Recipe: This recipe is a great alternative to regular stuffed cabbage, with more vegetables and leaner meats. Also a dish that’s delicious served with Irish soda bread. Get the recipe here.
  • Shepherd’s Pie: Depending on how it’s prepared, a traditional shepherd’s pie can have up to 600 mg of sodium and about 200 calories. Cut the sodium and calories with this healthier version that is equally as flavorful. Get the recipe here.
