Roasted red pepper hummus pizza from The Mitten Brewing Co.

A brand new brewery on Grand Rapids’ west side, The Mitten Brewing Company has paved a way in the Michigan craft beer scene with a love of unique brews, simple, delicious pizza, and an overall love of Detroit Tigers baseball.  Open for just over 6 weeks now, the brewery is set in an old firehouse with vintage baseball paraphernalia and genuine seats from the old Tiger’s stadium in the front walkway.  A true Tigers fan’s watering hole in Grand Rapids, the brewery will be a home away from Comerica Park.

General Manager, Lyndsay Israel, provided us with a delicious rendition of Roasted Red Pepper Hummus Pizza.  All pizzas at The Mitten Brewing Company can be made vegetarian, vegan and gluten-free.  In fact, all of the craft beer in the brewery is gluten-free as well!

Roasted Red Pepper Hummus Pizza

Ingredients:

Pizza Dough of your choice
3oz. diced chicken or ham (optional)
4oz. roasted red pepper hummus
1oz. each of kalamata olives, green peppers, banana peppers, and red onion (Feel free to add other vegetables to your liking!)
2oz. feta crumbles
4oz. shredded mozzarella
(Make it vegan by replacing cheese with 4oz. Daiya Mozzarella Shreds)

Directions:

Spread a thick layer of roasted red pepper hummus on your pizza dough, or gluten-free crust.  Sprinkle olives, peppers, and onion on top of the pizza (add other vegetables of your choosing).  Cover ingredients with your choice of the following: feta and mozzarella, all feta, or vegan-friendly Daiya mozzarella shreds.  Bake the pizza uncovered in the oven until the crust is brown and the cheese is bubbly—475-degrees for about 20 minutes.  Slice and share!  Note: if you are using all feta, the cheese will look soft when it is fully cooked.
