Description
This spring salad contains only whole ingredients and leans on olive oil and lemon for a simple, but nutrient-dense vinaigrette.
Ingredients

- 3 cups arugula
- 1 pear, thinly sliced
- ¼ cup shaved or freshly grated parmesan
- ½ lemon
- 3 Tbsp. olive oil
- Salt and pepper to taste
Instructions
- For the salad: In a large bowl, combine arugula, pears and parmesan.
- For the vinaigrette: In a small bowl, whisk juice from lemon half with olive oil, salt and pepper. Drizzle over salad.
- Toss well.
- Top with shaved or freshly grated parmesan and serve immediately.
