Fresh-squeezed Mimosa Mocktails – Serves 2

Description

In these mocktail renditions of mimosas, champagne is swapped for flavored sparkling water. Versatile and fresh, you can mix it with classic orange juice for a sweet and tangy flavor or peach puree for a mocktail version of the Bellini. A little dash of edible glitter takes the presentation to the next level.


Ingredients

  • Plain or flavored sparkling water (see instructions below)
  • 1 orange
  • 3 peaches or 1 can of peaches (packed in juice or water)
  • Edible glitter

Instructions

  1. For a classic mocktail mimosa: Cut an orange in half. Slice a thin wedge from both halves, if desired for garnish. In a champagne flute, squeeze juice from ½ orange and combine with plain or orange sparkling water. Add a pinch of edible glitter if desired and stir.
  2. For a peach Bellini mocktail: Slice 3 peaches, removing the core, reserving two slices for garnish. Blend with just enough water to allow it to blend (2-4 Tbsp.). Alternatively, blend 1 can of peaches in a blender until smooth. Add 4 tablespoons of the mixture to a champagne flute and top with peach-flavored or plain sparkling water. Add a pinch of edible glitter if desired and stir.
