Carrot, Date and Feta Salad

Looking for a new side dish to try? This “salad” combines unique ingredients to make a delicious dish. Enjoy this as a lunch, mid-day snack or a side dish.

The star of this dish is a combination of different colored carrots, which can aid in weight loss, help lower cholesterol levels and improve eye health. You can also use the standard orange carrot if your local supermarket doesn’t carry yellow carrots.

The dates add a subtle sweetness that can boost energy, promote heart health, strengthen bones and reduce constipation and inflammation. The feta cheese contributes a tangy flavor that balances well with the carrots and dates.

  • 3 medium orange and yellow carrots
  • 2 Tbsp. of roughly chopped fresh cilantro
  • 1 1/2 Tbsp. of olive oil
  • 2 tsp. of honey
  • Salt to taste
  • Juice of 1 lime
  • 1/4 cup crumbled feta cheese
  • 2 Tbsp. chopped toasted almonds
  • 2 Tbsp. finely chopped dates

Carrot, Date and Feta Salad

1. Thinly slice carrots into ribbons using vegetable peeler or mandoline.
2. Soak in ice water until the ribbons firm up and curl (about 15 minutes).
3. Drain and pat dry.
4. Whisk together the cilantro, olive oil, honey, 1/2 teaspoon salt and lime juice in a medium bowl.
5. Add carrots, feta cheese, almonds and dates.
6. Toss until evenly combined.
7. Enjoy!
