Watermelon Bend & Snap Pea Salad with Raspberry Vinaigrette
Inspired by Elle Woods’ iconic “bend and snap” move in the 2001 movie “Legally Blonde”, this sweet, summery salad is sure to be a hit with way more than 83% of your dinner guests. Hint: watch the movie while you eat if that reference doesn’t make sense to you.
Even if you’re not a fan of the movie or a Gemini vegetarian, this recipe is a winner. The ingredients create a unique and refreshing blend of flavors from fruits and a homemade dressing. Watermelon helps to maintain hydration while snap peas are low in calories and high in fiber. Radishes are packed with a variety of vitamins and antioxidants. Many believe feta cheese has antibacterial properties and is rich in protein. Mint is believed to help brain function (great for studying for those LSATs!) and adds a little bit of flavor that makes this salad perfect, just like Elle.
