Blueberry Lemon Energy Bites

In need of a healthy energy boost when you are on-the-go? These blueberry lemon energy bites help provide the healthy (and tasty) kick you need.

Blueberries are important for fighting infections, heart disease, and some cancers, and have even been found to improve memory.  Furthermore, they are full of vitamin C, good dietary fibers, manganese, and iron.

The lemon in the energy bites are full of vitamins and nutrients that your body craves. It’s important to note that fiber, B-vitamins, some calcium and proteins are in lemons as well.

Also, dates are filled with antioxidants and fiber. They also are very helpful with digestion.

  • 1 cup almonds
  • 1 cup walnuts
  • 3-4 cups dried plums
  • 8-10 dates
  • 3/4 cup freeze-dried blueberries
  • 1 Tbsp. chia seeds
  • 2 tsps lemon juice
  • zest of 1/2 lemon
  • 1/8 tsp. salt

Blueberry Lemon Energy Bites

1. Add all ingredients, except blueberries, to a food processor and blend for 2-3 minutes (or longer as needed for a smoother consistency).
2. Pour mixture into a bowl and fold in blueberries.
3. Roll mix into about 1-inch balls and store in the fridge or freezer. Will make about 16 balls. Enjoy!
