Fall Harvest Orzo Salad
This recipe combines some of fall’s best produce to make a yummy pasta salad that can be eaten as a main meal or side dish.
Apples can reduce cholesterol and constipation symptoms and are high in anti-inflammatory compounds. Cranberries only have 2 mg of sodium, 24 mg of potassium and 5 mg of phosphorus. All-in-all this dish only has 289 calories per serving.

Ingredients
- 4 cups cooked orzo, chilled (about 1 2/3 cups dried orzo)
- 1 cup dried cranberries
- 2 cups fresh apples of choice, cored and diced
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. fresh basil, chopped
- 1/2 cup crumbled blue cheese
- 1/4 cup blanched almonds, chopped
Fall Harvest Orzo Salad
Instructions
1. In a medium-sized bowl, add all the ingredients except blue cheese and almonds. Gently combine until everything is well incorporated.
2. Transfer the mixture to a serving dish and sprinkle with the crumbled blue cheese and almonds and serve.
