Corn & Peach Salad
This recipe combines all your favorite end-of-summer produce into one delicious dish. It’s simple, fresh and nutritious.
Tomatoes can reduce the risk of cancer and heart disease and also provide a good source of fiber to maintain a healthy gut. Peaches can reduce the risk of diabetes and cancer and are loaded with antioxidants and vitamin C. Corn is a good source of essential minerals and antioxidants. And the feta is just tasty. Just kidding – feta is actually a low-calorie source of vitamins A and K, folate, pantothenic acid, iron and magnesium.
