Red Caprese Bites
These little bites combine the best of both worlds – salty and sweet.
This healthy and delicious appetizer pairs well with all the flavors of a summer barbecue. The strawberries and veggies provide nutrients, fiber and antioxidants, while the mozzarella and salami (or ham) provide some protein to keep a growling stomach at bay until dinner is served. You can also make this dish vegetarian, too.
Not only is this appetizer nutritious and flavorful, it is also appealing to the eye. The bright red combined with the white and green makes a great addition to an Italian feast. It is also perfect to transport and is mess-free for outdoor meals. All you need is a toothpick and the fixings, and you have a yummy appetizer or side dish.

Ingredients
- 20 grape or cherry tomatoes, halved
- 20 fresh basil leaves
- 20 small balls fresh mozzarella cheese
- Salt and pepper to taste
- ½ cup balsamic vinegar
- 1/4 cup olive oil
- Red pepper, cut into 1 inch square for 20 pieces
- 10 strawberries, hulled and cut in half
- Salami or ham (optional)
- 20 toothpicks
Red Caprese Bites
Instructions
1. Using a toothpick, spear a tomato, a leaf of basil, a mozzarella ball, red pepper, strawberry half and salami or ham. Repeat with remaining ingredients.
2. Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.
3. Enjoy!
