Gluten-Free Banana Muffins

It can be hard to find good baking recipes when you’re trying to eliminate gluten from your diet. This gluten-free muffin recipe combines great flavor with healthy ingredients. They’re great for a weekend brunch or for eating throughout the week when you’re craving a little sweetness.

The bananas in this recipe are an excellent source of potassium and fiber. They can also help improve digestion and heart health.

Please note, if you don’t have any issues with gluten, you should be enjoying whole grains as a healthy part of your diet. Going gluten-free as a diet trend takes away the health benefits of soluble and insoluble fiber from whole grains.

  • 2 tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 1 ¾ cup gluten-free multi-purpose flour or any gluten-free flour of choice
  • ½ stick butter, softened
  • 2/3 cup sugar
  • 1 Tbsp. honey or molasses
  • 2 large eggs
  • 2 medium very ripe bananas, peeled and mashed
  • ½ cup chopped walnuts, optional

Gluten-Free Banana Muffins

1. Preheat oven to 375 degrees F. Grease 12-cup muffin pan or line with papers and grease papers.
2. Whisk together the baking powder, baking soda, salt, cinnamon and flour.
3. Beat together the butter, sugar and honey in a large bowl. Beat in the eggs one at a time. Make sure to incorporate and combine the entire contents of the bowl.
4. Add the dry ingredients to the egg mixture in alternating parts with the mashed bananas using the mixer. Make sure that all ingredients are well combined. Be sure to scrape the bowl.
5. Stir in the walnuts.
6. Fill the muffin cups to the top. It will rise above while baking.
7. Bake the muffins for 22-25 minutes. They are done when the muffins spring back when lightly touched. Remove from oven and let rest for 5 minutes before removing from the pan.
8. Serve warm. Enjoy!
