When Alison Roman revealed her healthy chickpea stew recipe, it managed to take the internet by storm. We can’t get enough of it because not only is it delicious, it’s packed with healthy ingredients that are perfect for your body during the winter weather.
One of the main ingredients, turmeric, is packed with curcumin – a strong anti-inflammatory and antioxidant ingredient that is great for your body during cold season and to reduce excess inflammation in the body. Don’t forget, every time you use tumeric, you must also have black pepper. Black pepper is the key for our body to absorb and use the curcumin from tumeric. Similarly, chickpeas are packed with healthy nutrients, including fiber and protein. Chickpeas are also known to help manage your blood sugar levels by allowing the body to avoid spikes that cause high blood sugars.
This stew can be a good option for vegetarians and vegans (just skip the yogurt). The accessible pantry ingredients help make for a flavorful, easy and comforting winter dish.
Check out the recipe, which originally appeared on the New York Times website. For more of Alison Roman’s recipes, check out her website here.
