Slow Cooker Jalapeño Popper Soup

Spicy jalapeño poppers are a fun appetizer, but have you ever thought of turning those flavors into a soup?

This spicy take is packed with healthy essentials, including jalapeños, cauliflower, garlic, bell peppers and more.

Jalapeños are filled with a good amount of fiber, vitamins B6 and C and are low in calories. In addition, they also contain metabolism-boosting properties. With the inclusion of vitamin-packed bell peppers and onion in the soup, it’s a definite health booster perfect for any occasion.

• 1 Tbsp. butter
• ½ red bell pepper, diced
• ½ green bell pepper, diced
• ½ onion, chopped
• 3-4 jalapeño peppers, minced and de-seeded (depending on how spicy you like it – you can keep the seeds)
• 3 cloves garlic, minced
• 1 cup corn
• 1 head cauliflower, chopped
• 3½ cups chicken broth
• ¾ cup whole milk
• ½ tsp. salt
• ¼ tsp. ground pepper
• ¼ tsp. garlic powder
• ¼ tsp. onion powder
• ¼ tsp. paprika
• ¼ tsp. chili powder
• pinch cumin
• 8 oz. reduced-fat cream cheese
• Optional – add 2-3 cups of rotisserie chicken, chopped

Garnishes (optional):
• bacon crumbles
• cheddar cheese
• slices of jalapeño
• roasted chickpeas

Slow Cooker Jalapeño Popper Soup

1. Spray slow cooker or use a slow cooker liner.
2. Place all ingredients except garnishes into the slow cooker. Cook on low for 8 hours or on high for 4 hours.
3. Serve warm with garnishes and enjoy!
