Oven Baked Sweet Potato Fries

Sweet potatoes are a nutritional powerhouse. They’re full of potassium, calcium and  magnesium. They are a healthy starch option to add to any entree because they are relatively low in calories, packed with fiber and loaded with vitamins and minerals. Crunchy, salty, sweet or spicy, these fries are easy to prepare and much lower in fat than the fast-food favorite.

  • 2 large sweet potatoes, peeled, cut into 1×3-inch wedges
  • 3 Tbsp. heart healthy oil
  • 1/2 tsp. sea salt
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. paprika
  • 1/4 tsp. garlic powder

Oven Baked Sweet Potato Fries

1. Position rack in upper third of oven and preheat oven to 425 degrees F. Spray baking sheet with non-stick spray.
2. Place sweet potatoes and oil in large bowl, toss lightly. Sprinkle with salt, pepper, paprika and garlic powder.
3. Arrange potatoes in a single layer on prepared baking sheet, being sure not to overcrowd.
4. Bake until tender and golden brown, turning occasionally. Cooking time is 18 to 24 minutes. Cool 5 minutes before serving. Enjoy!
