Apricot, Prune and Walnut Energy Bites
Dried apricots and prunes are low in calories and a fantastic source of energy and fiber, plus they’re naturally sweet. Apricots are also a good source of Vitamin A, which is necessary for your vision and immune system and also helps maintain healthy skin, teeth and bones.
These sweet fruits, paired with heart-healthy fat from walnuts, is a great alternative to processed granola and cereal bars for a quick pick-me-up any time of the day.
Ingredients
- 10 dried apricots
- 10 dried plums (prunes)
- 1 cup walnuts
- 1-2 Tbsp. honey
- ΒΌ-1/2 tsp. cinnamon
Apricot, Prune and Walnut Energy Bites
Instructions
1. Place apricots, prunes, walnuts and cinnamon in food processor. Process until moderately chopped.
2. Slowly add honey to mixture. Blend until it starts to form balls. Add more honey as needed, but try not to go over 2 tablespoons.
3. Roll batter into about 14-15 one-inch balls. Store in the refrigerator in a sealed container. Enjoy!
