Shrimp and Pineapple Lettuce Cups

1. Coarsely chop shrimp. In a medium bowl stir together shrimp, pineapple, pepper, cucumber, cilantro, and oil. Season to taste with salt and black pepper. To serve, spoon shrimp mixture into lettuce leaves. Enjoy!
