Blackened Shrimp Avocado Cucumber Bites

Appetizers are often full of fried, greasy combinations. For the next party you need to bring a dish to, try these light, but satisfying, bites.

Blackened shrimp avocado cucumber bites are healthy, delicious and only take a few minutes to make. As an added bonus, the leftovers make for a great lunch the next day.

Each jumbo shrimp provides about 3 grams of lean protein and is high in vitamin B12, phosphorous, choline, copper and iodine. Avocado is another heart-healthy, plant-based fat that offers omega-3 fatty acids.

Avocado Spread

  • 1 avocado, mashed
  • 1 green onion, thinly sliced or chopped
  • 1 Tbsp. cilantro, chopped
  • 1 Tbsp. parsley, chopped
  • 1 Tbsp. lime juice
  • Salt to taste
  • Cayenne pepper to taste – optional

Blackened Shrimp

  • 1 Tbsp. oil
  • 1 Tbsp. creole seasoning
  • 1 lb. shrimp, peeled and deveined
  • 1 cucumber, sliced

Blackened Shrimp Avocado Cucumber Bites

1. Toss the shrimp in the oil and seasoning and cook in a pan, pre-heated to medium-high heat. Cook for 2-3 minutes each side until pink and slightly blackened.
2. Mix all the ingredients for the avocado spread together thoroughly.
3. Assemble bites by evenly topping avocado spread on cucumber slices and placing shrimp on top. Serve immediately. Enjoy!
