Spinach and Feta Stuffed Mushrooms
Party guests will love these stuffed mushrooms that are not only delicious, but a healthy alternative as well.
The mushrooms and spinach offer a variety of vitamins, minerals, antioxidants, phytochemicals and fiber that many other appetizers do not include.

Ingredients
- 40 medium white mushrooms (about 1 3/4 lbs.), cleaned; stems removed
- 6 oz. feta cheese
- 1/4 cup chopped roasted red pepper
- 10 oz. bag chopped frozen spinach, thawed and squeezed well to removed excess water
- 1 1/2 cups breadcrumbs, divided
- Kosher salt and black pepper
Spinach and Feta Stuffed Mushrooms
Instructions
1. Preheat oven to 375-degrees F. Spray a baking sheet with nonstick cooking spray or cover with parchment paper.
2. Place mushrooms on baking sheet and set aside.
3. In a food processor combine goat cheese, red pepper, spinach, 1 cup breadcrumbs, 1/2 teaspoon salt and black pepper to taste. Pulse until well combined.
4. Stuff each mushroom with a heaping teaspoon of spinach mixture and sprinkle with remaining breadcrumbs. Bake for 20 minutes, cool slightly and serve. Enjoy!
