Raspberry Yogurt Muffins

Women with a high intake of dairy products like Greek yogurt have a lower risk of breast cancer due to the high amount of calcium. Using raspberry Greek yogurt doubles the raspberry flavor and pink color in these easy-to-make muffins in spirit of Breast Cancer Awareness Month.

These raspberry yogurt muffins are packed with whole grains, healthy fats and delicious flavor, making them the perfect breakfast to start the day or even a great dish to take to friends and family who are bravely fighting breast cancer.

  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/3 cup organic coconut palm sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 (6 oz.) carton raspberry Greek yogurt
  • 1/4 cup canola oil
  • 1/4 cup applesauce
  • 1 egg
  • 1 cup raspberries

Raspberry Yogurt Muffins

1. Preheat oven to 400 degrees F.
2. Spray, grease or put paper liners in 12 muffin cups.
3. In a medium mixing bowl, stir together dry ingredients.
4. In a small bowl, beat together yogurt, oil, applesauce and egg.
5. Stir yogurt mixture and raspberries into dry mixture until almost blended.
6. Add raspberries and stir until batter is just blended. Do not over mix.
7. Spoon into prepared muffin cups.
8. Bake until nicely browned, about 20 minutes. Enjoy!
