Baked Zucchini Fries

The number one eaten vegetable in the United States is the potato in french fry form. This recipe is quick and easy to make as a healthy alternative side dish.

The zucchini makes it a light dish, with only about 19 calories per one cup of sliced zucchini. Zucchini helps prevent cancer, cardiovascular diseases, protects against infections and disease and helps to maintain optimal health.

  • Cooking spray
  • 1/2 cup panko or whole wheat bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 3 zucchinis – ends trimmed, halved, and cut into 1/2-inch strips

Baked Zucchini Fries

1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper on a rimmed baking sheet. Then place cooling rack on top of baking sheet. You may also just place zucchini fries directly on parchment paper or a tin-foil/cooking spray lined baking sheet.
2. Stir bread crumbs and Parmesan cheese together in a shallow bowl. Whisk eggs in a separate shallow bowl.
3. Working in batches, dip zucchini strips into egg mixture, shake to remove any excess, and roll strips in bread crumb mixture to coat. Transfer coated zucchini strips to the prepared baking sheet.
4. Bake zucchini fries in the preheated oven, turning once, until golden and crisp, 20 to 24 minutes. You can then serve with homemade ranch dip. Enjoy!
