Too Tasty Not to Try: Sweet Potato Toast

Breakfast is a carb-lovers dream. Potatoes, toast, bagels, donuts…the list goes on. So how do you replace those delicious temptations with healthy alternatives? This recipe might be on to something.

The topping options make this healthy toast appetizing for everyone in the family. If you’re someone who tends to crave a sugary breakfast, go for the peanut butter yogurt with fruit. If you enjoy indulging in more salty options (bagels, potatoes, etc.) try it with the feta whip and avocado.

Eating refined carbohydrates can create a series of blood sugar highs and lows. Sweet potatoes, on the other hand, have a soothing effect on the stomach and effectively regulate blood sugar levels.

Ingredients

  • 2 large sweet potatoes
  • Avocado
  • Peaches
  • Berries
  • Apples
  • Bananas
  • cinnamon

Feta Whip

  • 8 ounces feta cheese, crumbled and at room temperature
  • 3 ounces whipped cream cheese or neufachel cream cheese, at room temperature

Peanut butter yogurt spread

  • 3/4 cup creamy peanut butter
  • 1 cup vanilla Greek yogurt
  • 2 tablespoons honey

Sweet Potato Toast with Feta Whip Spread, Avocado, Peaches and Berries OR Peanut Butter Yogurt Spread with Apples and Bananas

Instructions
1. Slice sweet potatoes into toast like pieces, about ¼ inch thick. Peeling it before hand is optional.
2. Toast twice on high to cook thoroughly.

Feta whip
1. Place feta into food processor. Pulse until small feta crumbles remain.
2. Add in cream cheese and puree for about 4 minutes, until it has a creamy consistency.
3. Spread onto sweet potato toast. Then top with sliced avocado, sliced peaches, berries or any combination of your favorite fruits/ vegetables.
4. Serve and enjoy.

Peanut butter yogurt spread
1. Combine peanut butter, yogurt and honey until well combined.
2. Refrigerate for 30 minutes to let i
3. Spread on sweet potato toast and then top with apples, bananas and cinnamon. Or choose your favorite toppings, serve and enjoy.
