How to have a gluten-free Thanksgiving

Though going gluten-free has created a bit of the ‘fad’ buzz, there are a large number of individuals with whom eating gluten can cause serious health issues. With the Thanksgiving holiday just a few days away, it can be difficult to enjoy the meal with the rest of your loved ones if worried about gluten and feeling sick afterwards.

Luckily, transforming your Thanksgiving meal into gluten-free alternatives is not only easy to do, but the rest of the table will not be able to taste the difference. A number of dishes are naturally gluten-free, or only require one small tweak in directions. For example, you can make your turkey without filling it with stuffing; you can also substitute cornstarch instead of flour in the gravy. Others are traditionally full of gluten, yet still easy to modify.

 

My favorite Thanksgiving dish, and consequently the one chock full of gluten, is the stuffing (or dressing). Below is a recipe for easy gluten-free stuffing; I promise you will not know the difference!

 

 

Gluten-Free Herb Stuffing

Serves: 5

 

Ingredients:

2 cups crumbled gluten-free rolls (I suggest Udi’s)

2 cups crumbled gluten-free corn bread (recipe)

½ cup chopped green onion

¼ cup finely chopped white onion

½ cup finely diced celery

3 tablespoons butter

¼ tsp salt

¼ teaspoon ground black pepper

1 ¼ cup chicken (or vegetable) broth

¼ cup finely chopped apple, no skin

½ cup cranberries

¼ tsp sage

¼ tsp poultry seasoning

 

*If you like a more savory stuffing, you can substitute the apples and cranberries for more celery and onion.

 

Directions:

Crumble the corn bread and biscuits the night before to dry out. Preheat oven to 375 degrees. Sautee celery and onion with the butter. Add all spices, including salt and pepper. Stir in the broth and cook on low for five minutes. Pour mixture of seasonings and broth over the bread crumbs in a greased pan. Bake for about 20-25 minutes on the middle rack of the oven until the top is golden brown.
