Veg-fetti cake recipe: Have your cake and some veggies too
I already know what you are thinking. A cake with vegetables?
Yes it is and it is tasty. I am not going to tell you it is “good” for you, but it is a fun way to incorporate some vegetables and a little more nutrition into your cake. It is also colorful and very easy to make. So try it for your next party, but don’t tell your guests until after they try it. They will be asking for the recipe too. This is also a great way to sneak in some extra veggies for kids. (wink, wink)
The nutritional analysis of this cake will basically be the same as the boxed cake information provided, but it will have some more vitamins, minerals and fiber from the vegetables.

Vanilla or yellow cake box mix
eggs (per box directions)
water (per box directions)
applesauce, instead of oil
2-3 cups of colorful vegetables, finely chopped or food processed – I recommend zucchini, summer squash, celery, carrots and radishes
1. Preheat the oven. Follow the directions on the boxed cake mix. Replace the oil with applesauce to reduce the fat, if you wish.
2. After you beat the cake mix, clean and prep your vegetables. Finely chop or use a food processor to produce 2-3 cups of vegetables. Please note, if you want the vegetables to be more visible, hand cut them finely. If you don't want them to be as visible, use a food processor.
3. You will then fold this into the mixed cake batter. Pour into cake pans and bake according to the directions on the box. Cool.
4. Lightly frost or glaze with your favorite icing, slice and serve.
