Healthy No-Bake Trail Mix Breakfast Cookies

Breakfast is one of my three favorite meals of the day (rim shot… thank you, I’m here all week). But seriously, having breakfast in the morning gives you the energy you need to get through the day, not to mention that it helps kickstart the metabolism so you can burn calories efficiently throughout the day. You’ve heard it before that “Breakfast is the most important meal of the day.” Well, I definitely agree.

I realize sometimes breakfast can be a burden. I hear many different reasons why people don’t eat breakfast, from “I don’t have time to eat” to “I am not hungry in the morning” to “I don’t like breakfast foods, like pancakes and eggs.” Well, these healthy breakfast cookies will have you singing a different tune. Because honestly, who doesn’t love cookies no matter what time of day?

Here is one of my favorite healthy cookies recipes, which I have adapted from a variety of different recipes. Recipes are always a great guide for you to be adventurous and creative in the kitchen. Not only are these easy to make, but they are also healthy and delicious.

No-Bake Trail Mix Breakfast Cookie Bites

These breakfast cookies are inspired by trail mix. One of the best things about trail mix is you have the liberty to add your favorite things to it. So here is my favorite combo of ingredients that pack a nutrient-dense punch in a small cookie. Since these are no-bake cookies, they’re even better for spring and summer because you don’t even have to turn on the oven. They will last in an airtight container for about a week or two, so no excuses for skipping breakfast.

You can use whatever nuts you have on hand; I have used cashews, pistachios, almonds and walnuts. Just make sure you just use one type at a time. As for the dried fruit, I personally think dried cranberries, blueberries, cherries or raisins work best, but again whatever you have will work fine. I have used dried apricots and dried bananas before, too.

  1. Well, you do have to cook it but not long and easy to prepare. I love stir fry bean sprouts with whatever veggies we have and I add in one egg for a quick scramble. I use maybe a tsp of oil (toasted sesame or chili oil). Dash of organic soy.
