Video Recipes: Learn How to Make Delicious Dishes Using Spaghetti Squash in Place of Pasta

In the two videos below, Chef Dawn Bause from Commerce Township demonstrates recipes that use spaghetti squash as a healthy alternative to pasta.  She also shows how to make two recipes to go with the squash.

Chef Dawn offers cooking classes in the Detroit area and culinary classes in Italy and France. She received the 2010 Hometown Health Hero award from the Michigan Department of Community Health for her efforts to make Michigan a healthier place.

In the first video Chef Dawn demonstrates how to make spaghetti squash and basic marinara. The ingredients are listed below.

Basic Marinara

4 tablespoons extra virgin olive oil
2 cloves garlic, peeled and smashed
1 small onion, finely chopped
1 28-ounce can whole Italian plum tomatoes or 10 medium sized fresh plum tomatoes, seed with skins removed
Coarse sea or kosher salt and fresh cracked pepper to taste
6 to 8 fresh basil leaves, torn into pieces
½ teaspoon red pepper flakes (optional)

Spaghetti Squash

1 hard squash about 8 or 9 inches in length and 4 or 5 inches in diameter with a pale, even color

In the second video, Chef Dawn shows how to make party squash, a recipe with lots of vegetables mixed with the spaghetti squash. The ingredients are below.

Party Squash

4 tablespoons extra virgin olive oil
1 medium onion, diced
2 cloves garlic, smashed
1 red pepper, diced
1 yellow pepper, diced
1 medium zucchini, diced
1 pint cherry tomatoes, diced
Coarse sea salt or kosher salt
Fresh cracked pepper
2 pounds cooked spaghetti squash
Fresh basil
1/3 cup freshly grated Parmesan or Romano cheese
