Red, White and Blue Quinoa Fruit Salad

Side dishes on the Fourth of July can add many unneeded calories. Including a healthy salad, such as this one, is helpful when watching calories and is still super flavorful.
Blueberries, strawberries and dragon fruit are all in season throughout the summer making this salad very fresh. Berries are a great source of fiber and have the lowest amount of sugar of fruits. Dragon fruit is often viewed as an “ugly fruit” but it’s great for our health, as it has zero complex carbohydrates so it’s easy to digest.
Quinoa contains high levels of heart-healthy fats and antioxidants called flavanoids. It is one of the only plant foods that supplies complete proteins, offering all nine essential amino acids in a healthy balance.
