Go Red for Women: Heart Healthy Recipes

Ingredients

  • 1 avocado, halved and pitted
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • 2 oz. feta cheese
  • Red pepper flakes (optional)
  • 1 tbsp. chopped parsley

Avocado Egg Bowl with Tomato Hearts

Instructions
1. Preheat oven to 350 degrees.
2. Make hole in middle of each avocado half a bit bigger by scraping out some flesh with a spoon. 
3. Lay avocado halves skin side down in a baking dish. Carefully crack 1 egg in each avocado. Season with salt and pepper, and top with feta.
4. Bake for 15 minutes, or until egg is cooked to liking. Season with red pepper flakes and top with parsley. Serve immediately. Enjoy!

Ingredients

  • 1 (15 oz.) can white beans (cannellini), drained and rinsed
  • 1 tbsp. chopped chives
  • 2 cloves minced garlic
  • ½ tsp. cumin
  • ½ tsp. coriander
  • Lemon juice from a whole lemon
  • 2-3 tbsp. olive oil
  • Salt and pepper to taste
  • Assorted raw vegetables, such as chopped broccoli florets, sliced green and red peppers, and baby carrots
  • Whole wheat pita chips

White Bean Hummus with Veggies and Pita Chips

Instructions
1. Combine beans, seasonings, lemon, olive and salt and pepper to taste.
2. Mash with a fork or put all ingredients in a food processor for smooth hummus.
3. Serve with raw vegetables of choice, such as cucumbers, carrots, sugar snap peas, bell peppers, broccoli, and grape tomatoes and if desired, pita chips. Enjoy!

Ingredients

  • 1 lb. fillet of salmon
  • Olive oil
  • 1/2 cup blood orange juice (fresh squeezed)
  • 2 whole blood oranges, thinly sliced
  • 2 tbsp. brown sugar
  • 3 tbsp. soy sauce
  • 2 cloves garlic, minced
  • 2 tsp. fresh ginger, minced
  • Salt and pepper to taste
  • Chopped parsley, garnish

Blood Orange Salmon

Instructions
1. Set the oven to broil.
2. Grease the bottom of a casserole dish with olive oil. Also rub the salmon fillet with olive oil and sprinkle with salt and pepper.
3. In a small saucepan, bring the blood orange juice, brown sugar and soy sauce to a boil. Add garlic and ginger.
4. Cook liquid until reduced by half.
5. Pour the sauce over the salmon and place the fresh blood orange slices on the salmon.
6. Bake the salmon for about 15 minutes, or until the fish is done to your liking. You can flip the blood oranges over halfway through if they look like they are burning.
7. You know the salmon is ready when it easily flakes apart with a fork.
8. Serve warm with quinoa and brown rice and favorite vegetable of choice. Enjoy!
