Pesto Chicken Bake

Ingredients

For the pesto:

  • 1 cup fresh basil
  • 3 tbsp. water
  • 2 tbsp. parmesan cheese
  • 2 tbsp. almonds
  • 2 tsp. olive oil
  • 2 cloves garlic
  • 1 tbsp. garlic
  • 1 tbsp. lemon juice
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper

Chicken Bake:

  • 1 lb. boneless, skinless chicken breast or boneless, skinless chicken thighs
  • Roma tomatoes, cut into slices
  • 1/2 cup low fat shredded mozzarella cheese
  • 2 tbsp. balsamic vinegar

Pesto Chicken Bake

Instructions
1. Preheat oven to 400 degrees. Spray baking dish with cooking spray. Set aside.
2. Blend basil, water, Parmesan, almonds, olive oil, garlic, lemon juice, salt and pepper into food processor. Pulse until fully combined to make pesto.
3. Place chicken in prepared cooking dish. Salt and pepper chicken.
4. Spread pesto on top of chicken. Then place tomato on top of chicken and pesto. Then sprinkle with mozzarella cheese.
5. Bake for 30-35 minutes or until chicken is fully cooked.
6. Drizzle balsamic vinegar on top of chicken before serving. Serve hot. Enjoy!
